First full day in Akumal

Our main activity for the day was to take a cooking class in Tulum. We got there at 10:30 in the morning, spent hours preparing our meal, which we then got to eat. Our teacher was a delightful woman. There were a total of 16 people in the class and one baby. The people were from all over the world. It was a very enjoyable activity. I am anxious to try some of the recipes when I get back to Portland.

These roasted vegetables were used to make a sauce. She roast the vegetables without oil or salt. I might have to try that.
Guacamole and chips. The guacamole was mainly made from tomatillos. Very interesting and quite tasty
The makings for the cervice. The shrimp was marinated in lime, juice and salt, which fully cooked it. The other ingredients are red onion, and cucumbers.

The next job was making corn tortillas for our tacos and quesadillas.

On the left are the quesadillas. The rest of the ingredients are used to make the tacos. Starting on the left are the tortillas wrapped in a special sleeve to keep them warm. Then comes cilantro, grilled pineapple, the salsa made out of the roasted vegetables, guacamole and wonderfully marinated pork. The pineapple and pork were marinated in a very flavorful marinade.

After getting back to our apartment, we put on our bathing suits, got our snorkeling gear and headed to the lagoon. So here are more pictures of fish. Hope you’re not getting tired of pictures of fish.

Our rental car. It is actually very comfortable and easy to drive. Have no idea what make it is.

Since we had a big lunch, we decided to make dinner in the apartment. Berni had the idea to buy a rotisserie chicken when we were at the market yesterday. She had taken some of the bones and made a little bit of a broth. I sautéed some onions, cut up some of the chicken, added it and the broth and some spinach to the pan. I cut up some avocado and cucumber. Berni made pico de gallo. It turned out to be a wonderful dinner.

That’s it for today. Tomorrow hopefully we will be doing some more snorkeling. I guess you could look forward to more fish pictures.
