Leon was originally founded as a Roman military base and has been designated a UNESCO world heritage site for it place in history as the first established location of a European Parliament. Our day in Leon was spent visiting a rural farm. The owner was quite passionate about her work and her animals. She owned hundreds of sheep, 42 horses and many dogs. She also had one cat named Mary, which we didn’t get to see. One of the primary functions of the farm is to do therapy work with disabled children and teens. She does this by using the animals. Another thing that she does is make the greatest cheese. So we got to help her make some cheese and we learned how she uses the horses to help with the therapy. After this, we sat down to a farm lunch which consisted of a great stew that she had been cooking all day outside on a fire, and of course, the cheese that we made. She also served watermelon for dessert and it had to be the best watermelon. I think I’ve ever eaten.

We next got a demonstration on how the horses were used to work with disabled children. It was basically that the children were placed in different positions on the horse in order to exercise and stretch out their bodies.

Back in Leon we visited the Cathedral. I’m not much for going into churches, but I have to admit that this church was really beautiful. It was not very ornate and had incredible stain glass windows.
