Last day in Mazatlan

Dan and Berni have a timeshare on the north end of Mazatlan. On Monday morning Berni and I went there to spend two nights. It is a charming resort with a swimming pool and beach. We mainly came here to just hang out and relax.

This morning Berni and I went to a cooking class. We made four different types of tacos, two vegetarian, one chicken and one fish. The vegetarian ones were very interesting and delicious. The chicken one was with a mole sauce. She gave us quite a bit of information about cooking in different parts of Mexico. She certainly got my interest in going to Oaxaca for its cuisine. Berni and I are going to try to go there next year.

Paola our teacher
An assortment of peppers and beans
Roasted poblano pepper
Sliced poblano pepper and onion in a cream sauce. This was the filling for one of the tacos. It was my favorite.
Paola stirring the mole
A salad made from jicama and pineapple with a lime and hot pepper dressing. This was also very good.
Berni flipping tortillas
Me flipping tortillas
Mushroom cheese filling. Also very tasty.
Our teacher and assistant getting ready to batter and fry the fish.

Tomorrow afternoon I leave for Portland. I understand it might be snowing when I get there. Quite a shock to go from palm trees to snow in one day. I’m not exactly looking forward to it.
